Chefs Basic Pasta Dough

A Quick and Easy Basic Pasta Dough Recipe

1 ½ cups all-purpose flour
1 ½ cups Semolina
8 large egg yolks
1 tsp kosher salt
2 tbsp olive oil
5 tbsp water

In a food processor fitted with a steel blade combine all of the ingredients. Pulse the pasta dough until it holds together. Turn the dough onto a lightly floured surface and knead the dough by hand, until a smooth dough is formed. Wrap the dough in plastic and let it rest at room temperature for 30 minutes to one hour. At this point, the pasta dough is ready to use, but may be kept refrigerated for up to 3 days.

Makes 1 lb.; Serves 6-8
