Pumpkin Hummus

Pumpkin Hummus

1 clove garlic, minced
15 oz. can chickpeas, drained and rinsed
15 oz. can pumpkin puree
2 tablespoons lemon juice
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
2 tablespoons tahini
1/4 cup Chef’s  Toasted Seasame Olive, and extra for finishing
1 teaspoon salt (or more to taste)
toasted pepitas for garnish (optional)

*Makes 4 cups


Add the first 6 ingredients to the bowl of a food processor (garlic through coriander). Process until smooth.

Scrape down the bowl with a spatula and add the tahini, processing again until smooth.

Scrape down the sides of the bowl again, add the olive oil and salt and process until smooth.

Taste and adjust the seasoning with salt.

Serve in a bowl topped with toasted pepitas and more olive oil accompanied by pita chips and fresh veggies.
